One of my best recent discoveries - Edit
I discovered this place in Paris very recently and was blown away. Not only their bread is absolutely amazing, but they have plenty of vegan food options. The rice, buckwheat and chocolate muffin I took was incredible (and so easy on the stomach!!!! Indeed, almost all their products are gluten-free). Everything is organic. The owner is a lady who used to be an interior design architect and decided to open this gem, I'm grateful she did.
